The Chinese water chestnut (or water chestnut) is a plant, Eleocharis dulcis.

The corms of the plant are the water chestnuts. It has a crispy white flesh and can be eaten raw, slightly boiled, grilled, pickled, or tinned. This plant comes from China. They are grown in flooded paddy fields.
